Peach-Avocado Salsa |

| 2 large fresh peaches, peeled and diced |
1 tablespoon lime juice |
| 1/4 cup diced jicama (optional) |
1 teaspoon olive oil |
| 2 Roma tomatoes, seeded and diced |
1/4 teaspoon salt |
| 1 small avocado, diced |
1/4 teaspoon ground red pepper |
| 1 tablespoon minced red onion |

| Combine all ingredients in a large bowl. Cover and chill until
ready to serve. |
