Peach Oatmeal Muffins

6 Fresh Dickey Farms peaches	1 teaspoon vanilla extract
1-1/2 cups oatmeal	1/2 tsp. cinnamon
2 cups all-purpose flour	1 egg
3/4 cup brown sugar	1/3 cup vegetable oil
3 tsp. baking powder	1/2 cup milk
1 teaspoon salt

Spray muffin tins with non-stick spray. Slice 3 peaches (about 1 cup) and puree in blender. Coarsely chop remaining peaches and set aside. Combine peach puree with remaining ingredients and stir until well mixed. Fold in shipped peaches. Spoon into muffin tins. Bake at 350° for 30-35 minutes.

Yield: 18 muffins
