| Combine corn syrup, water, lemon juice and lemon peel in a sauacepan.
Bring to a boil and simmer 10 minutes. Add butter and remove syrup
mixture from heat. Mix flour, baking powder and salt together.
Cut in shortening. Add milk and stir just until moistened. Roll
out 1/2-inch thick and cut into eight 5-inch squares. Combine peaches,
sugar, cinnamon and nutmeg. Place 2 tablespoons of the peach mixture
on each square. Fold corners to center and pinch edges to seal.
Arrange pouches in a greased 8x12-inch baking dish. Pour syrup
mixture over dumplings, moistening each. Bake at 425o for 10 minutes.
Reduce heat to 350o and bake 30 minutes longer. Serve warm. |
